Pancake mix no more!

Pancakes from scratch or pancake mix?

I have a funny story about this 🙈. My husband grew up in a home where pancakes, pies and all the good stuff was made from scratch… well there I am coming into his life making pancakes using a premade mix. I mean why not right?! Add water,add mix powder and done! Plus, I thought that he wouldn’t notice the difference. At the time, I didn’t tell him that I was using a pancake mix; I would hide it in the back of my pantry so he would think that my pancakes were made from ✨scratch✨

It took a couple of years into our marriage for me to confess about my pancake mix secret, he told me that he knew from day one that I was using a mix 😳I guess I couldn’t fool him 🙃

So then I thought… how hard can it be?! I came across this super easy recipe to make the BEST PANCAKES EVER! And since then, I have not looked back! No need to buy that premade mix anymore.

This recipe is a hit every time, quick + they freeze well 😉

This is all you need ✍️:

• 1 egg

• 1 cup all-purpose flour or whole wheat

• 1 tablespoon baking powder

• 1/4 teaspoon salt

• 3/4 cup milk

• 2 tablespoons vegetable oil or melted butter

🥞 I add a splash of vanilla & cinnamon for extra flavor.

In a medium bowl, beat egg with a fork or whisk until fluffy. Stir in remaining ingredients just until flour is moistened ( okay if batter is a little lumpy) do not over mix or pancakes will be tough.

✨for thinner pancakes stir in 1 to 2 tablespoons additional milk.

Heat griddle or skillet over medium high heat, brush with veg oil if necessary.

For each pancake, pour slightly less than 1/4 cup batter onto skillet or hot griddle. Cook 2 to 3 mins or until bubbly on top and dry around edges. Turn; cook other side until golden brown.
