Try this simple recipe for 🎃Pumpkin Spice Peanut Butter & Oatmeal Protein Balls🎃
INGREDIENTS:
- 1 cup rolled oats
- 1/2 cup peanut butter (creamy or chunky)
- 1/4 cup honey or maple syrup
- 1/4 cup pumpkin puree (not pumpkin pie filling)
- 1-2 tablespoons ground flaxseeds (optional for added fiber)
- 1-2 tablespoons hemp seeds (optional for added nutrients)
- 1/2 teaspoon pumpkin pie spice
- 1/2 teaspoon cinnamon
- 1 teaspoon vanilla extract
- A pinch of salt
- 1/4 cup mini chocolate raisins (or chocolate chips)
INSTRUCTIONS:
1. Mix dry ingredients: In a large bowl, combine oats, pumpkin pie spice, cinnamon, hemp seeds, ground flaxseed & salt.
2. Add wet ingredients: Stir in peanut butter, honey or maple syrup, pumpkin puree & vanilla extract. Mix until everything is well combined.
3. Add optional mix-ins: Fold in the mini chocolate chips or raisins.
4. Chill the mixture: Refrigerate the mixture for 20-30 minutes to make it easier to handle.
5. Form the balls: Once the mixture is firm, roll it into 1-inch balls.
6. Store: Place the protein balls in an airtight container and store them in the fridge for up to a week or freeze them for up to 3 months.
These are great for a quick snack or a healthy energy boost!
