Wow wow WOW! This dish was so yummy. I found these recipes on the Hungry Happens website and I’m so thankful I did!!
This is a 3 part dish:
🥣 Tzatziki
🥗 Greek Salad
🍗 Greek Chicken Thighs - with yogurt marinade
Ingredients + Instructions
🥣 Tzatziki
• Greek Yogurt (10 oz)
• Red Wine Vinegar (1-2 TSP)
• Olive Oil (1 TBSP)
• Garlic Cloves (2, crushed)
• Cucumber (1, peeled, grated (cheeses grater))
• Dill (2 TBSP, chopped)
• Salt, to taste
- Step 1: chop and/or peel and grate your ingredients
(For the cucumber: first peel the outside skin off, then grate with a cheese grater. put grated contents into a paper towel and squeeze out excess water)
- Step 2: combine all ingredients into a mixing bowl
- Step 3: mix and enjoy!
🥗Greek Salad
SALAD:
• Cucumber (1 Large, chopped)
• Tomatoes (3-4, wedge sliced)
• Feta Cheese (1/2 cup, crumbled)
• Red Onion (1/2 of onion, small)
• Kalamata Olives (1/3 cup)
DRESSING
• Olive Oil (1/3 Cup)
• Red Wine Vinegar (1-2 TBSP)
• Capers (1-2 TBSP)
• Oregano (1/2 TSP)
• Salt + Pepper to taste
- Step 1: Chop salad contents and place in bowl
- Step 2: Make dressing in a separate bowl, mix and pour over salad
🍗 Greek Chicken Thighs
MARINADE:
• Green Yogurt (1 cup)
• Garlic Cloves (4, minced)
• Oregano (1 TSP)
• Lemon (1, juiced)
• Salt, Pepper, Garlic Powder to taste
CHICKEN:
• Chicken Thighs (2LB, boneless, skinless)
• Season nicely with salt, pepper, garlic powder
- Step 1: Chop/cut/mince ingredients for the marinade. Combine all ingredients into a mixing bowl.
- Step 2: Season chicken. After seasoned, add chicken to the marinade in the mixing bowl
- Step 3: Transfer chicken + marinade to a plastic bag (optional). You may also keep it in the mixing bowl and cover. Refrigerate for 1-6 hours.
- Step 4: Remove most of the marinade from the chicken before cooking. Cook the chicken on a skillet for about 7 min each on medium heat. If chicken starts to golden, lower heat. Chicken should be light golden on both sides.
Combine all to a plate and enjoy!💛
