Ingredients:

For the Crust:

1 1/2 cups graham cracker crumbs

1/4 cup granulated sugar

1/2 cup unsalted butter, melted For the Cheesecake Filling:

2(8 oz) packages cream cheese, softened

1/2 cup granulated sugar

2 large eggs

1 cup sour cream

1 teaspoon vanilla extract

1 cup banana pudding mix (instant)

1/2 cup milk

2 ripe bananas, sliced

For the Topping:

1 cup whipped cream

1/4 cup crushed vanilla wafer cookies

Extra banana slices for garnish

Directions:

Prepare the Crust:

Preheat your oven to 325°F (163°C).

In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined.

Press the mixture evenly into the bottom of a 9x13-inch baking dish.

Bake for 8-10 minutes, then remove from the oven and let cool.

In a large bowl, beat the cream cheese and granulated sugar together until smooth.

Add the eggs one at a time, mixing well after each addition.

Mix in the sour cream and vanilla extract.

In a separate bowl, whisk together the banana pudding mix and milk until smooth.

Fold the pudding mixture into the cream cheese mixture until fully combined.

Gently fold in the sliced bananas.

Assemble and Bake:

Pour the cheesecake filling over the cooled crust and spread it evenly.

Bake for 30-35 minutes, or until the center is set and the edges are lightly golden.

Allow the bars to cool completely in the pan, then refrigerate for at least 4 hours or overnight.

Add the Topping:

Once chilled, spread the whipped cream evenly over the top of the cheesecake bars.

Sprinkle with crushed vanilla wafer cookies and garnish with additional banana slices if desired.
