Mexican Street Corn Salad

I have loved traditional Mexican Street Corn since the first day I had it. This however, is not a traditional recipe- there are some amazing recipes out there from Mexican content creators if you are looking for one. This is a Mexican inspired corn salad that has been simplified so that even my 99 year old white grandma enjoyed it 😂

Ingredients

2lbs corn (fresh or frozen)

1 cup of diced red onion (I prefer sweet onion)

1 cucumber, seeded and diced

1/2 cup of chopped fresh cilantro

4 tablespoons mayo

2 tablespoons lime juice

1-2 jalapeños diced

1 teaspoon chili powder

1 teaspoon salt

Cotija cheese

Instructions

1. I started with frozen corn so my first step was cooking it in a skillet with a touch of butter and a little sugar (trust me!)

Be sure not to add salt until the end or it dehydrates the corn

2. Take the corn off the skillet and cool it until it’s room temperate

3. While the corn is cooling, chop up all veggies and toppings

4. Mix in all ingredients

5. Add any toppings and it ready to serve
