🍚🌮Healthy Homemade Mexican Rice (Dairy Free, Gluten Free)

🙌This rice is seriously SO good, SO easy & made with simple, wholesome ingredients ❤️ This may not be considered “authentic” to some, but I think it’s DELISH & it’s just how I make mine. It’s packed nutrients and better for you ingredients 🙌💕
👩🏻🍳INGREDIENTS:
1 tbsp olive oil 🫒
1 small onion, diced 🧅
2 tsp garlic, minced 🧄
1/2 red bell pepper, diced
1 small jalapeño, seeded and finely diced
1 cup uncooked brown or jasmine rice 🍚
1/2 tsp cumin
Salt, to taste 🧂
8 oz. organic tomato sauce 🥫
1 cup organic chicken broth
Handful finely chopped cilantro
👩🏻🍳INSTRUCTIONS:
Heat oil in a large saucepan/wok over medium-hight. Add the onions, garlic, bell pepper, and jalapeño. Sauté for 1-2 minutes. Add the rice & saute about 2 minutes. Add spices, tomato sauce & broth. Bring to a boil, cover, reduce the heat to low and simmer until rice is cooked all the way through, about 15 minutes (mixing occasionally). Toss in a handful of cilantro, fluff up the rice, & dig in!
