Blueberry Chia Seed Energy Balls 🫐
This is a snack I always keep on hand!! They are so quick & easy to make too 🤗
Gluten free | Dairy Free | Refined Sugar Free | Vegetarian.
👩🏻🍳INGREDIENTS:
1 cup old fashioned oats
¼ cup almond butter
¼ cup honey 🍯
¼ cup freeze dried blueberries
1/3 cup fresh blueberries 🫐
2 tbsp chia seeds
1/2 tsp cinnamon
1/4 -1/2 tsp vanilla extract
Pinch sea salt 🧂
👩🏻🍳INSTRUCTIONS:
In medium mixing bowl, mix all ingredients until well combined. Refrigerate mixture for 30 minutes. Scoop mixture with cookie scoop, then roll into 14 balls and enjoy!
👉Storing Instructions: Refrigerate leftovers covered for up to 1 week or freeze for 3 months.
✨You can also use maple syrup or agave as a substitute for the honey. I do find that the honey is easier to work with and sticks better, but it’s an option!
