Layered Red Enchilada Casserole 😍

👩🏻🍳INGREDIENTS:
2 lbs organic grass fed ground beef(or ground turkey)
8 flour tortillas of choice
1 1/4 cup shredded fiesta cheese 🧀
8 oz. organic refried pinto beans
1 15 oz. can red enchilada sauce
1/2 yellow onion, diced 🧅
2 tsp garlic, minced 🧄
1/2 tbsp olive oil 🫒
2 tsp chipotle seasoning
1 tsp garlic salt
1/2 tsp onion powder
1 tsp cumin
👩🏻🍳INSTRUCTIONS:
1. Preheat your oven to 400°F. Spray an 9x11 glass baking dish with nonstick spray.
2. Preheat a large saucepan over medium/high heat with the olive oil.
3. Add your onion and garlic and sauté for a minute or two.
4. Add in your ground beef and cook until browned. Once it is browned, turn the heat down to medium/low.
5. Add in your chipotle seasoning, garlic salt, onion powder, cumin, and beans. Mix until thoroughly incorporated and turn off the heat.
6. Pour 1/3 of the enchilada sauce on the bottom of the baking dish. Then add 4 tortillas on top of the enchilada sauce.
7. Spread half of the meat/bean mixture on top of the tortillas, another 1/3 of the enchilada sauce, and then half of the cheese.
8. Add the remaining 4 tortillas on top, and repeat the steps with the remaining ingredients.
9. Bake for 20 minutes. Let sit 5-10 minutes before slicing and serving.
