Healthy Peach Cobbler For 2 (Gluten Free, Dairy Free, Refined Sugar Free)๐
๐ Made with fresh peaches, wholesome oats, and a hint of cinnamon, this dessert is not only delicious but also nutritious. Treat yourself and a loved one to a guilt-free delight ๐ค
๐ฉ๐ปโ๐ณINGREDIENTS:
1 large peach, sliced ๐
3 tbsp brown monk fruit, or to taste
1 tsp cinnamon
1/2 cup + 1/4 cup rolled oats
1/4 cup unsweetened applesauce
Optional: Add a little bit of lemon zest to the peaches for some zing!
๐ฉ๐ปโ๐ณINSTRUCTIONS:
Divide sliced peaches among 2 small greased ramekins. Sprinkle with 2 tbsp monk fruit & cinnamon. Bake at 400ยฐF for 15 minutes. Blend the 1/2 cup of oats in a blender. In a bowl, mix together the blended oats, 1/4 cup rolled oats, applesauce, & remaining monk fruit. Mix until a crumble forms. Remove the peaches from the oven & sprinkle the crumble mixture on top. Bake for 8 more minutes.
