Mediterranean Quinoa & Chickpea Salad 🥗🥗🥗

👩🏻🍳INGREDIENTS:
For the Salad
1 cup quinoa
2 cups water
1 medium cucumber (diced)
1 large red bell pepper (diced)
½ medium red onion (diced)
15 ounces chickpeas (rinsed & drained)
1 tsp garlic (minced)
Sea salt (to taste)
Pepper (to taste)
For the Dressing
⅓ cups freshly squeezed lemon juice
¼ cups extra virgin olive oil
2-3 tbsp red wine vinegar (depending on how much you like that taste)
👩🏻🍳INSTRUCTIONS
Heat up a medium saucepan over medium/high heat with your quinoa & water. Bring the water to a boil and then simmer for 15 minutes. Remove quinoa from heat and allow to cool.
Make your dressing by combining the dressing ingredients. Set aside.
In a large bowl, combine the cooled quinoa, cucumber, bell pepper, chickpeas, garlic, & dressing. Season with salt & pepper to taste.
