Cottage Cheese Egg Bites 🥚

I made the most delicious, easy, & healthy cottage cheese egg bites using my Cucina Pro Mini Pie Maker @Cucina.Pro (such a good Amazon find - link in bio!)!

INGREDIENTS:

6 large eggs 🥚

1/3 cup egg whites

1 cup 1% cottage cheese

1 cup chopped spinach

3 mini bell peppers, diced

2 green onions, diced

1/2 cup shredded cheddar cheese 🧀

1/2 tsp paprika

1/2 tsp basil 🌿

Salt & pepper, to taste 🧂

INSTRUCTIONS:

In a large bowl, combine the eggs, egg whites,

cottage cheese, shredded cheese, veggies and spices. Mix until fully incorporated. Pour roughly 1/8 cup of egg mixture in each spot in your mini pie/quiche maker. Cook for 8 minutes. Repeat for remaining egg bites (should make 16)

**Can also bake in the oven in a muffin tin at 375° for 30 minutes.
