16oz pasta
1 cup cheddar Gruyère(for topping)
Panko(pork or bread for topping)
Cheese Sauce-
4 Tbsp bacon grease
4 Tbsp flour
5 cups shredded cheddar Gruyère
1/2 lb white American cheese
1.5 cups heavy cream
2.5 cups whole milk
1 Tbsp yellow mustard
1.5 tsp smoked paprika
SPG to taste
Make your roux on low med heat with bacon grease/flour. After stirring a few min slowly add heavy cream/milk. Once that starts to thicken add white American cheese while storing them slowly incorporate cheddar Gruyère. Add mustard and paprika, then SPG to taste. While making cheese sauce boil pasta for 7-8 min the drain. Mix pasta/cheese sauce and top with panko and additional cheese. Bake at 325° for 30 min then under broiler on high for a couple min.
