Ingredients:
-Boneless Skinless Chicken Thighs (yu can use whatever part of the chicken yu prefer)
-1 1/4 c Rice
-48 oz of Chicken Broth
-Cream of Chicken soup
-Celery
-Carrots
-Onion
-Bell Pepper
-Minced Garlic (Fresh or Jar)
-Bay Leaves (they’re pictured, but i forgot to add them lol)
-Season Chicken
-Chop Vegetables
-Heat pot. Once yur pot is hot enough add cooking oil
-Cook chicken. set aside
-To the same pot add a little butter, yur veggies, and season
-Saute veggies for about 2-3 mins. Add minced garlic and saute for another 3 mins
-Add Chicken broth and cream of chicken soup. stir
-Pour in rice, add 2-3 bay leaves, and bring to a boil
-Add chicken (cut it however yu prefer. i decided to shred mine).
-Lower heat. Cover. Simmer until rice is done
*If yu want more of a thin, soupy broth, skip adding the cream of chicken soup and only use 1 c of rice
