This cucumber tomato salad recipe is a favorite of mine! It’s easy to put together and pairs well with so many dishes. It also makes for the perfect summer salad!
What you’ll need:
-1 cucumber
-½ cup comatose
-½ lemon
-¼ red onion
-salt, black pepper and chili flakes (to taste)
-2 tsp sugar
-¼ tsp garlic
-1 tbsp olive oil
-2 tbsp apple cider vinegar
How to prepare:
Step 1: combine all your “wet ingredients” and seasonings to make the dressing and whisk until thoroughly combined
Step 2: chop up your veggies. I cut my cucumber into small moon shape pieces. I cut the cherry tomatoes in half and dice the red onion
Step 3: add dressing to bowl with chopped veggies. Add additional seasonings to taste and chill in the fridge for at least an hour before serving. This allows the veggies to absorb the dressing!
Step 4: Enjoy! This salad pairs well with any type of protein or grilled meat. It also makes a great side salad. This would also pair great in a pita wrap!
