*You can use coconut oil instead of butter for dairy free!
Recipe from @ourbalancedbowl
Ingredients
* 3 medium ripe bananas
* 1/2 cup (8 tbsp) melted salted butter
* 1 large egg
* 1/2 cup pure maple syrup
* 1 and 1/2 cup all purpose flour
* 2 tsp ground cinnamon
* 1 and 1/2 tsp baking soda
* 1/4 tsp kosher salt
Instructions
1. Preheat the oven to 375. Prepare your 12 count muffin tin - either grease the cups or add in muffin liners. Set aside for now.
2. Add the bananas to a large bowl. Mash the bananas up with a fork until they are fully mashed, with minimal banana lumps left. To this bowl, add in your maple syrup, melted butter, and egg. Mix well with a whisk.
3. To this bowl, add in the all purpose flour, cinnamon, baking soda and salt. Mix together gently with a wooden spoon until all ingredients are combined and no streaks of flour are left.
4. Grab your prepared muffin pan. Fill the muffin cups until 2/3 full. Bake for 20-24 minutes or until a toothpick can be inserted and comes out clean.
5. Once done, let cool in the pan for a few minutes and then remove them to a cooling rack.
6. When ready, eat with warm maple butter. Enjoy
