This is a staple in our house! Roasting a whole chicken can seem intimidating, but it’s super simple and so handy to know because it can feel your multiple meals and the bones become fantastic stock. Here is the most simple, fool proof method:
1 Whole Chicken, (4-5 Pounds)
Salt and pepper
Preheat the oven to 425 degrees
Pat the chicken dry and season with salt and pepper
Put chicken breast side up on a roasting pan and place in the oven.
Roast at 425 degrees for 20 minutes.
After 20 minutes, lower temperature to 375 degrees and roast for another 40 minutes or until the juices run clear and the internal temperature reads 165 degrees on a thermometer.
Let the roasted chicken rest for 10 minutes before carving.
