I’ve been on a salmon kick recently! I had a single fillet left over, and decided to use it in a hot pasta salad. So worth it! 😍

Here's my recipe for a single serving of creamy salmon and pasta:

Ingredients:

- 4 oz salmon fillet

- 1/2 cup cooked pasta (your choice of type)

- 1 tablespoon butter

- 1 clove garlic, minced

- 1/4 cup heavy cream

- 1/4 cup grated Parmesan cheese

- Salt and pepper to taste

- Fresh parsley, chopped (for garnish)

Instructions:

1. Season the salmon fillet with salt and pepper on both sides.

2. Heat a non-stick skillet over medium heat and melt the butter. Add the minced garlic and sauté for about 1 minute until fragrant.

3. Place the salmon fillet in the skillet, skin side down, and cook for 3-4 minutes until browned. Flip the salmon and cook for another 3-4 minutes until cooked through. Remove the salmon from the skillet and set aside.

4. In the same skillet, add the heavy cream and grated Parmesan cheese. Stir until the cheese is melted and the sauce is smooth.

5. Add the cooked pasta to the skillet and toss until well coated with the creamy sauce.

6. Flake the cooked salmon into bite-sized pieces and gently fold it into the pasta.

7. Cook for an additional 1-2 minutes until everything is heated through and well combined.

8. Season with additional salt and pepper to taste.

9. Serve in a bowl, garnished with fresh parsley.
