If you’re looking for an easy crockpot meatball recipe that tastes amazing, you’re in the right place. These meatballs are great over pasta or in a sub, you can also freeze them for later. With Mother’s Day coming up, these are also a good choice to make as a family.
Ready in 4 hours (with 30 minutes of prep)
Serves 8 people
Ingredients:
1 lb Ground Beef
1 lb Ground Bison or Pork
2 Eggs
½ c Shredded Parmesan
1 c Italian Bread Crumbs
Minced Garlic
1 packet of Lipton Onion Soup mix
Spices (Amount and combination varies on mood): Salt, Pepper, Paprika, Cayenne, Garlic Powder, Onion Powder, Italian Seasoning
2 24 oz cans of Crushed or Whole tomatoes
6 oz can of tomato paste
Preparation
1. In a large bowl add meats, eggs, Parmesan, Italian bread crumbs, garlic, ½ of the Lipton Soup mix, and your choice of spices and mix until combined.
2. Form the mixture into equal sized balls, and sear each side in a large pan on the stove, careful not to fully cook them at this stage or they’ll be chewy.
3. In a crockpot, place a thin layer of the crushed tomatoes on the bottom and then add a layer of meatballs, cover with more of the tomatoes and sprinkle some of the remaining Lipton Soup mix. Repeat this step until all the meatballs are in the crockpot and covered with the crushed tomatoes.
4. Add the tomato paste and any additional seasoning that you like.
5. Cook on low for 4 hours, stirring occasionally.
6. Serve warm, over pasta, on toasted bread, or on its own.
