When I was in college, I would go to my Puerto Rican/Cuban roommate’s home and her parents would always have a glass jar full of sofrito.
It’s the base for almost everything they cook.
This past weekend we went over for a cookout and she made the most BOMBBBB Cuban black beans.
I knew her secret was the SOFRITO.
I HAD TO MAKE IT!
Here is her recipe and how it turned out for me:
🌱 1 bunch of Cilantro
🌿 1 bunch of Culantro
🌱 One big white onion
🌿4 bulbs of garlic 🧄
🌱 1 1/2 green bell pepper 🫑
🌿1 red bell pepper
🌱 Ahi Dulce (small pepper hard to find) I substituted an Habanero pepper which is slightly more spicy
Chop, chop then blend but keep it chunky I’ve heard.
What I did with it:
Made some BOMB black Beans. 🫘
We grilled some sirloin steaks 🥩, I made some white rice in my Instantpot and put the beans over it.
The tortillas were bought warm from a local Mexican store.
OMGGGGGG, delish.
It was Sunday, so of course we ate in bed while watching a movie.
We watched: The little things, a true crime movie starring Denzel on Netflix
I froze the rest. She recommended making cubes and keep it in freezer but I needed to buy a special one with a lid so my whole freezer doesn’t smell like onion and garlic.
