Ingredients
- 12 hard-boiled eggs
- ¼ cup Chosen Foods Classic Avocado Oil Mayo
- 1 medium avocado
- 1 tsp salt
- 4-6 fresh ground pepper turns
Optional toppings:
- 2-4 tsp whole-grain pickled mustard seed
- Micro greens or micro star flowers
- Truffle salt, to taste
Directions
1. Cut the hard-boiled eggs in half, lengthwise. Gently scoop out the egg yolks and place them in a food processor or immersion blender cup.
2. Next add the mayo, avocado, salt, and fresh ground pepper. Blend together on high until it’s smooth as can be.
3. Pour the mixture into a piping bag (or a ziplock bag with the corner cut off) to pipe the avocado mixture into each half.
4. Top deviled eggs with mustard seed, micro greens, and truffle salt if you’re feeling fancy!
