Easy Chicken Quesadillas 👩🏻‍🍳

These chicken quesadillas are a staple in my house & they’re super easy to make!

Here's a step by step of the recipe:

Ingredients:

- 2 cups cooked chicken, shredded (rotisserie chicken works great)

- 1 cup shredded cheese (cheddar, Monterey Jack, or a blend)

- 4 large flour tortillas

Instructions:

1. Prepare the Filling:

- In a mixing bowl, combine the shredded chicken, cheese, and optional ingredients

2. Heat the Pan:

- Heat a large skillet over medium heat. Add a little butter or oil to coat the pan.

3. Assemble the Quesadilla:

- Place a tortilla in the pan. On one half of the tortilla, spread a portion of the chicken and cheese mixture.

- Fold the other half of the tortilla over the filling to form a half-moon shape.

4. Cook the Quesadilla:

- Cook for 2-3 minutes on each side, or until the tortilla is golden brown and the cheese is melted.

5. Serve:

- Remove from the pan and let it cool for a minute before slicing into wedges. Serve with your favorite sides like guacamole, sour cream, or extra salsa.
