ingredients
- Cucumber, 1 large, chopped
- Cherry tomatoes, 1 pint, halved
- Kalamata olives, 1/2 cup, pitted and halved
- Avocado, 1 large, diced
- Red onion, 1/4 cup, thinly sliced
- Extra virgin olive oil, 3 tablespoons
- Lemon juice, 2 tablespoons
- Dried oregano, 1 teaspoon
- Salt, 1/2 teaspoon
- Black pepper, 1/4 teaspoon
- Feta cheese, 1/4 cup, crumbled (optional)
instructions
1. In a large bowl, combine chopped cucumber, halved cherry tomatoes, and sliced red onion. Time: 5 minutes
2. Add halved Kalamata olives to the bowl. Time: 1 minute
3. In a small bowl, whisk together olive oil, lemon juice, dried oregano, salt, and pepper to make the dressing. Time: 2 minutes
4. Pour the dressing over the vegetables and gently toss to combine. Time: 1 minute
5. Add diced avocado to the bowl and gently fold in to avoid mashing. Time: 2 minutes
6. If using, sprinkle crumbled feta cheese over the top. Time: 1 minute
