Easy Weeknight Dinner

I wanted to share another easy weeknight dinner that I love to make. Tonight we had marinated steak tips, corn on the cob and roasted potatoes.

Steak Tips

Cut up steak and marinate in your favorite marinade. I love mixing equal parts bbq sauce, teriyaki and Italian dressing (don’t hate it until you try it. It’s so so good). I place it all in a bag and let it sit overnight. My husband then grills them.

Corn on The Cob

Fill a large pot with 2 inches of water and 2 tbsp salt. Place corn on a steamer basket or metal rack inside the pot. Bring to a boil, cover, and steam for 15 minutes. Use tongs to take the corn out and smother with butter and salt 🤪

Roasted Potatoes

Preheat oven to 425. Wash and cut 2lbs of potatoes into 1” cubes. I like to blanch mine by letting them soak in cold water for an hour, but you don’t have to. Pat dry and add to a bowl. Add 2 tbsp olive oil, 1 tsp garlic powder, 1/2 tsp of paprika, salt and pepper to taste, and 3/4 tbsp of dried rosemary. Mix and spread on a baking sheet lined with tin foil. Bake for 35 minutes.
