Lobster Ravioli Alla Vodka

This recipe is soo easy and definitely on rotation in our house. I also sometimes make it with rigatoni instead of ravioli and it’s 🔥

•1 package lobster ravioli (I get it at Costco)

• 1/4 cup olive oil

•1 small yellow onion

• 1 teaspoon red pepper flakes

•2 cloves of garlic minced

• 1/2 cup of tomato paste

• 1/3 cup vodka

• 1 cup heavy cream

• 1/2 cup Parmesan cheese

• Fresh basil

• 1 cup reserved pasta water

1) Add pasta to salted, boiling water and cook until just under al dente

2) Reserve 1 cup of pasta water

3) Sauté onion in oil until translucent

4) Add garlic and red pepper flakes and cook for 1 minute 5) Add tomato paste and cook until deep red in color

6) Pour in 1/3 cup vodka

7) Turn off heat and add in 1 cup heavy cream, pasta, grated parm, and pasta water

8) Plate and garnish with more cheese and basil

Recipe is from chef Genevieve. I found it a few years ago and it’s the only pink vodka sauce recipe that I use now. So simple, yet so delish.
