This hearty salad was a filling dinner for us when we felt that we needed a break from heavy, oil-rich meals! You can swop out the dressing for a sesame sauce which would make it even easier for prep!

Ingredients (for 2 servings):

Your choice of leaves (lettuce, cabbage etc)

2 tbsp tahini

1/4 cup cold water

2 chopped anchovies

1 tbsp white wine vinegar

1 can chickpeas

1 can tuna

1 sliced tomato, sliced

1 medium red onion, sliced

3 eggs

salt and pepper

Recipe:

1. Boil the eggs (from fridge) for 7 min to get hard boiled eggs with gooey yolks.

2. Toast half the chickpeas in an air fryer at 180 deg C for 10 min.

3. Prepare dressing by mixing tahini, water, anchovies, white wine vinegar in a bowl. Season with salt and pepper.

4. Prepare salad by tossing leaves in dressing, then adding tomatoes, onion, the remaining half of chickpeas (not toasted), tuna and season with black pepper.

5. When serving, sprinkle toasted chickpeas on top of the salad and add boiled eggs.

Not only is it pleasing to the eye, the salad also tasted great! (coming from someone who legit doesn't like salads and will only eat them for hEaLtH~) Try it out!
