Ingredients:

πŸ˜‹ 1 can spam (I used low sodium)

πŸ˜‹ 1 cup sushi rice (freshly cooked or leftover)

πŸ˜‹ ΒΌ cup soy sauce (low sodium if possible since spam is already salty)

πŸ˜‹ ΒΌ cup rice vinegar or mirin

πŸ˜‹ 2 tbsp sugar

πŸ˜‹ 1 scallion

πŸ˜‹ Kewpie (Japanese) mayonnaise

πŸ˜‹ Furikake

πŸ˜‹ Roasted seaweed (optional)

Instructions:

1️⃣ If you’re not using leftover rice, cook sushi rice according to package instructions.

2️⃣ Preheat oven to 450F. Slice scallions and separate whites from greens. Cube spam. Heat oil in large pan and lightly cook scallion whites for a minute or until fragrant. Add spam to pan and cook until golden brown.

3️⃣ Make sauce by combining soy sauce, rice vinegar, and sugar. Pour into pan and simmer on low for about 3 minutes or until sauce thickens and becomes a glaze.

4️⃣ Layer components in a baking dish as follows: sushi rice, furikake, spam, kewpie mayo, more furikake. Bake for 5-7 minutes.

5️⃣ Top with scallion greens. Cut squares and serve as is or eat with roasted seaweed sheets.

Commentary:

I love spam musubi, so if I ever don’t want to bother with getting it in the right shape or if I’ve run out of roasted seaweed, this recipe is perfect! If you want the rice to stick together better, you can mix it with a dash of rice vinegar and really press it into the baking dish. You can also add less soy sauce than listed for the sauce if you’d prefer for it to come out less salty. Enjoy!
