Soy Honey Salmon with Roasted Broccoli Recipe

Ingredients (yields 2 large servings or 4 smaller servings):

🥦 14-16 oz salmon

🥦 ⅓ cup honey

🥦 ⅓ cup soy sauce (or make a mixture of soy sauce and ponzu for more complex flavor)

🥦 1 head broccoli

🥦 About 2 tbsp olive oil

🥦 2 tsp red pepper flakes

🥦 2-4 cloves of garlic

🥦 Kosher salt, to taste

🥦 Black pepper, to taste

Instructions:

1️⃣ Grate garlic cloves. Combine with honey, soy sauce, red pepper flakes, and kosher salt and black pepper to taste. Mix to combine thoroughly.

2️⃣ Cut salmon into pieces of desired size. Pat dry and marinate in sauce mixture, making sure every piece is coated on each side. Refrigerate for 15 minutes and allow salmon to marinate.

3️⃣ Wash and chop broccoli into bite-size pieces. Drizzle with olive oil and season with salt and pepper (and any other seasonings you may want.) Toss to make sure each piece is seasoned.

4️⃣ Preheat oven to 400°F. Lay broccoli and salmon onto parchment-lined baking sheets. Reserve salmon marinade. Bake for a total of 22 minutes, with broccoli on the bottom rack so it browns, and flip broccoli halfway through cook time.

5️⃣ Cook remaining marinade on low in a small saucepan until it thickens slightly, stirring every few minutes so the honey doesn't burn. Divide salmon and broccoli among plates and pour marinade onto salmon pieces. Serve immediately.

Commentary:

This is a tried-and-true recipe that I’ve made for a few years now, and I’m so happy to share a staple in my home with you all 🙂

There are a few things I love about this recipe:

It’s super easy and I have all of the seasonings for the marinade at home already.

You put the broccoli and the salmon in the oven at the same time and except for flipping the broccoli halfway, you can just let the oven do all the work while you clean or do something else.

And you can take the broccoli and salmon out at the same time! You can even cook both components on one big sheet pan if you’d like.

I once had a friend come over for dinner and I had no idea he didn’t like salmon, so I made this recipe.. and he finished the entire plate! If that’s not a vote of confidence, I don’t know what is 😂
