We are a celiac disease home, plus I’m severely allergic to dairy 🥲 so cooking/baking gluten/dairy free has become second nature to me! Like most people don’t even know that our meals are gluten or dairy free because I make really simple swaps!
I followed a normal chocolate chip cookie recipe and literally just swapped out the flour for the Bob’s Red Mill 1-to-1 Baking Flour and used it just like normal flour! This stuff is unbelievable! The cakes I’ve made with this flour… 👩🏻🍳😘 🤌🏼
Recipe:
• 2 1/4 cup of flour
• 1 tsp baking soda (or I used baking powder)
• 16 tbsp (2 sticks) of butter - I used Country Crock Plant Based Butter: an oil based dairy free butter
• 3/4 granulated sugar *melt it because it’s so much easier to mix*
• 1 tsp vanilla (Mexican vanilla is superior)
• 1 tsp salt
• 2 large eggs *beat first* then mix in :)
• semi sweet chocolate chips- the enjoy life brand is my FAVORITE but they were sold out :(
BAKE: 350° for 10ish minutes :)
These are so good and you’ll never be able to tell they’re gluten or dairy free :)
