I love food, but Iโm also on a health journey right now. Iโm not about to cut foods out of my diet, but I am working on incorporating healthier foods into my day. Chicken breast is a good source of lean protein and is great ๐๐ฝ fitness fuel! This Greek-Inspired Chicken is perfect for meal prepping, since you can make a big batch for the week!
Here are the ingredients I used for the chicken breast marinade: fresh oregano, garlic, shallots, Greek yogurt, olive oil, red pepper flakes, smoked paprika, and S&P! I marinate my cubed chicken breast for at least 3 hours (overnight if possible). Then, I bake it at 425F for 15 minutes, toss and bake for 8 minutes more, then broil it for 3 minutes. Super simple and you can make a balanced meal prep with lettuce, tomatoes, cucumbers, rice, and tzatziki (my fave sauce to serve with this)!
