These bars are actually INSANE🤯

My dad has been making zucchini carrot bars this summer, with fresh vegetables from our garden, but they were a little too sweet for me… I set out to create a less sugary & fluffier version of them, and that’s exactly what I did! These bars are the perfect Fall staple, without refined sugar, & packed with veggies! 🍂✨🥕

These would be great as muffins to send with the kids to school or bread for a Sunday morning as well! ✨

Ingredients:

1 cup grated zucchini

1 cup grated carrots

1/2 cup greek yogurt

1/3 cup ghee (melted)

1 ripe banana (mashed - little to no chunks)

1/2 cup honey

2 eggs

1 Tbsp vanilla extract

1 3/4 cup flour

1 tsp cinnamon

1 tsp baking powder

1/2 tsp baking soda

Pinch salt

Healthy cream cheese frosting:

*not too sweet & a lot creamier👌🏼

8oz cream cheese

1/3 cup vanilla greek yogurt

Less than < 1/4 cup maple syrup

(Add a little powdered sugar to thicken if needed)

Directions:

Start by adding your wet ingredients to a medium bowl. Mix until smooth. Fold in your grated vegetables until combined. In a separate large bowl, add all of your dry ingredients and whisk together. Pour your wet ingredients into the dry ingredients and fold together just until combined. Pour into a greased 9x13 pan.

Bake at 350° for 20-25 minutes or until a toothpick comes out clean. Let the bars FULLY cool before adding the frosting. Dust with cinnamon and top with finely chopped walnuts or pecans if desired. Place them in fridge or freezer to chill frosting before serving. Enjoy!
