Itβs the weekend again π
I made some cornmeal porridge this week to go with the hard dough bread we got. Hereβs how I made it.

π Cornmeal Porridge π
Put milk and water in a pot on medium heat. Ratio is about 2 parts milk to 1 part water. Add a pinch of salt, cinnamon stick, orange peel, and mace. Add cornmeal in and continuously stir. I added it in while the milk was still lukewarmβ you will be in βstirring jailβ once you add the cornmeal in. Ainβt no leaving the pot anymore.
Just keep stirring as the cornmeal cooks. Add hot water if itβs getting too thick. DO NOT ADD COLD WATER.
I donβt time my cooking so just taste the cornmeal for texture, if itβs gritty then it needs to cook some more. We want a smooth and creamy consistency.
Once the porridge is to your liking in texture and thickness, turn the heat down to low and add in your condensed milkβ this is to taste. And add in a capful of vanilla extract.
Serve with a side of hard dough bread and you are done π
Additional tips/notes: Keep a kettle of hot water on standby to thin out the porridge if necessary. If you donβt have dried orange peel or mace you can still make this and it will taste fine.
