I’m sharing with you my favorite pasta dish to make at home! In my opinion, there is no better or more classic pairing than homemade tomato sauce with Chianti Classico🍷
You don’t need a pasta maker to make this at home. It’s a labor of love but so worth it.👩🏼🍳♥️
Pasta Ingredients 👇🏼
2 cups flour
4 eggs
Sauce Ingredients 👇🏼
3 cups slices tomatoes
4 cloves of garlic
1/2 of a large, sweet onion chopped
Olive oil
Fresh basil leaves
Salt and Pepper
2 teaspoons of sugar
1/2 cup pasta water
Parmesan cheese
Pasta Directions 👇🏼
Start with your mound of flour and eggs in the middle. Wisk slowly until all flour is combined with the egg, then start to knead. Knead for 10-15 or until your dough is smooth and combined. Refrigerate for 30 minutes. Divide dough into 4 pieces and roll out each section until very thin. Fold ends in and slice about 5mm pieces. Once all of the pasta noodles are finished, add to salted, boiling water for 4 minutes. Strain and toss with olive oil.
Sauce Directions👇🏼
Heat olive oil over medium heat. Add in garlic cloves and simmer for 30 seconds. Add in sliced tomatoes and chopped onion. Add basil, sugar, and salt and pepper to taste. Simmer until tomatoes start to burst, use a fork to help this process. Add pasta water and simmer for a few more minutes. Toss in fresh noodles and finish with parmesan cheese.

Chianti has savory flavors with high acidity and tannins, which makes it an incredible wine with food. This Carpineto Chianti Classico has notes of red fruits and dried herbs with bright acidity which balances well with the acidic tomatoes.
