👩🏻 Sourdough Bagels 🥯
When we boil bagels in water with a little sugar it gives a crunchy exterior crust and creates a barrier to keep the inside nice and doughy. Follow the recipe below to make your own sourdough bagels.
Ingredients:
Dough:
1/2 cup active sourdough starter
1 cup water (might need more)
2 Tablespoons honey
2 teaspoons sea salt
4 cups bread flour
Optional toppings:
Brown sugar/ cinnamon
Sesame seeds
Salt
Thinly shredded cheese
Everything bagel seasoning
Steps:
1. Using a stand mixer, stir together starter, water, honey and salt.
2. Slowly add flour while mixing with hands or a spatula.
3. Attach a dough hook and mix on lowest speed for 6 minutes. Dough will be stiff
4. Cover and let rest for 8-12 hours
5. Line baking sheet with parchment paper. Turn dough onto a clean surface and separate into 6-8 sections. Shape into a ball then use your thumb to poke a hole and shape the bagel. Place on parchment paper.
6. Cover and let rise for about 60 minutes.
7. Preheat oven to 425 degrees F.
8. Bring 8 cups of water to a boil in a large pot. Add 1 Tablespoon sugar
9. Boil the bagels 3-4 at a time for 2 minutes on each side. Flipping bagels with a slotted spoon.
10. Use the slotted spoon to remove the bagels and place on parchment paper to cool.
11. Add desired toppings
12. Bake at 425 F for 25-28 minutes until golden brown.
Additional tips/notes:
Best eaten fresh, can store covered at room temperature for up to a week. Freeze for up to two months.
