Ingredients:

For the Pork Chops: 🐖

• 4 bone-in pork chops (about 1-inch thick)

• 3 tbsp maple syrup

• 1 tbsp Dijon mustard

• 2 tbsp apple cider vinegar

• 1 tbsp olive oil (for searing)

• Salt and pepper (to taste)

• Fresh thyme (optional garnish)

For the Roasted Vegetables: 🥔🥕🍠

• 2 large carrots, peeled and cut into 1-inch pieces

• 2 medium sweet potatoes, peeled and diced

• 2 parsnips, peeled and cut into 1-inch pieces

• 1 red onion, cut into wedges

• 2 tbsp olive oil

• 1 tbsp fresh rosemary, chopped

• 1 tbsp fresh thyme, chopped

• Salt and pepper (to taste)

Instructions:

1. Preheat the Oven: 🧑‍🍳

Preheat your oven to 425°F (220°C) to get it ready for roasting the vegetables.

2. Prepare the Vegetables:

• In a large bowl, toss the carrots, sweet potatoes, parsnips, and red onion with olive oil, fresh rosemary, fresh thyme, salt, and pepper.

• Spread the vegetables out evenly on a baking sheet, making sure they’re in a single layer so they roast evenly.

• Place in the preheated oven and roast for 25-30 minutes, flipping halfway through until they’re golden and caramelized on the edges.

3. Prepare the Maple Glaze: 🍁

• While the veggies are roasting, whisk together the maple syrup, Dijon mustard, and apple cider vinegar in a small bowl. Set aside.

• Season both sides of the pork chops with salt and pepper.

4. Sear the Pork Chops:

• Heat a large skillet over medium-high heat and add 1 tablespoon of olive oil. Once the oil is hot, add the pork chops.

• Sear the pork chops for 3-4 minutes on each side until they develop a golden-brown crust. Don’t worry about cooking them all the way through at this point—they’ll finish in the oven.

5. Glaze and Finish in the Oven:

• Once the pork chops are seared, brush each side generously with the maple glaze.

• Transfer the skillet (if oven-safe) or move the pork chops to a baking dish, and finish cooking them in the oven for about 10-12 minutes, or until the internal temperature reaches 145°F (63°C).

• About halfway through cooking, brush them again with more of the glaze for extra flavor.

6. Rest and Serve:

• Once the pork chops are done, remove them from the oven and let them rest for 5 minutes. This helps the juices redistribute, keeping the chops juicy.

• Serve the pork chops with the roasted root vegetables on the side, garnishing with fresh thyme if desired.

7. Optional:

• For an extra touch of richness, drizzle the remaining maple glaze from the pan over the pork chops and vegetables right before serving.

Tips:

• Marinade for extra flavor: If you have time, marinate the pork chops in the maple glaze for 30 minutes to an hour before cooking for even deeper flavor.

• Mix up your veggies: Feel free to add or substitute your favorite root veggies—like beets or turnips—for variety.

• Crispier edges: If you like your veggies extra crispy, broil them for the last 2-3 minutes of roasting.
