Zucchini Lasagna Dinner

Perfect transition meal from winter ➡️ summer

Ingredients:

3 zucchinis

1 large can crushed tomatoes

1 pound ground beef

15oz ricotta

Shredded Parmesan

Shredded mozzarella

1 egg

handful of basil

3 cloves garlic

Salt & pepper

Recipe:

1. Slice zucchini thin length wise

2. Place on paper towel & salt, let sit for 10 mins then pat dry (trying to get all the water out)

2. Cook ground beef in pan

3. To beef, add crushed tomatoes, garlic, and half the basil you cut up

4. In a medium bowl, mix ricotta, 1 cup Parmesan, 1 egg, salt & pepper then mix

5. In a large baking dish layer slices of zucchini, meat sauce, ricotta & repeat until nothing left

6. Add a generous amount of mozzarella & basil to the top

7. Bake at 400 for 30 mins
