🧚🏻 Description: One of the delicious and famous Taiwanese street food but you can now recreate at home with this simple recipe! 🇹🇼 The chewy and fragrant egg crepe wrapped with meat floss and cheese that not just adding texture, but intensify the flavour of this love-by-all breakfast dish! 😍😋🍳

Servings: yield 1 egg crepe

⏳ Prep time: 10 minutes

Cooking time: 15 minutes

Ingredients:

10 tablespoons all purpose flour

2 teaspoons of potato starch

1/4 teaspoon of salt 🧂

6 tablespoons of water 💧

2 tablespoons of chopped spring onions 🌱

1 slice of cheddar cheese 🧀

2 medium eggs 🥚

3 tablespoons of meat flossed

2 tablespoons of cooking oil (or olive oil)

1 tablespoon of mayonnaise

Steps:

1. In a mixing bowl, mix flour, potato starch, salt, water and spring onions until well mixed.

2. On a frying pan with cooking oil, pour the batter onto the pan and evening it out into a thin layer. Fry over medium heat.

3. Beat the eggs on top of the batter. Using a chopstick to slightly whisk the egg without breaking the crepe underneath.

4. Layer the meat floss evenly on top of the egg.

5. Cut the cheddar cheese into small piece and place them on top of the meat floss.

6. When the egg is about 80% cooked with the side of the crepe turning golden, use a spatula to gently lift one side of the egg crepe.

7. Turning the egg crepe occasionally until all the sides are evenly cooked.

8. Dish the egg crepe out from the pan, cut it into small pieces and serve with some mayonnaise.

Additional tips/notes: besides meat floss and cheese, personalise your Taiwanese egg crepes with other ingredients like bacon, ham, sausages! Alternatively, you make turn it into a sweet dish by leaving the salt and spring onions out, replacing with some sugar in the crepe and wrap with chocolate, bananas, peanut butter! 😍😍
