My boyfriends dad is coming home today from the hospital so I decided to make a healthy pork bone broth soup for him to come home to. I also enjoy this dish on cold days. This nourishing bone soup is full of healthy vitamins and minerals.
Ingredients:
• pork rib tips (bone in)
• daikon
• corn (optional)
• green onion
• ginger
Steps:
1. If your pork rib tips come in a long strip, slice them to about 1 inch pieces so there is a bone in each piece.
2. Peel the daikon and cut into bite sized pieces.
3. Slice whole corn into smaller pieces.
4. Bring a large pot of water to boil and add in a few slices of ginger and the white parts of the green onion. I like to fill the pot up 70% with water so I have space for the meat and vegetables.
5. Add the sliced pork rib tips.
6. After a few minutes, you should see a cloudy layer of impurities on top. Use a spoon and scoop the impurities out.
6. Add the chopped daikon and corn to the pot.
7. Turn the heat down to a low simmer and set timer for 1 hour.
8. After an hour, you can add in noodles of your choice. If you don’t have noodles, this soup also pairs great with a bowl of rice. I also added a soft boiled egg but you don’t have to!
9. Garnish with spring onions.
