You guys, this recipe was SO GOOD and lasted me a few days to get me through the work week! Seriously, I ate it all the way up🤤 Here's how you make it:
Pasta salad:
12 oz pasta (I used rotini whole wheat)
1 can chickpeas - drained, rinsed, and towel dried
1 cup cherry tomatoes, halved
1 yellow bell pepper, diced
1 cucumber, diced
1/2 cup sliced Kalamata olives
Spinach
Feta cheese
Dressing:
1/3 cup olive oil
3 tbsp red wine vinegar
1 tsp dijon mustard
1 clove minced garlic
1/2 tsp oregano
Juice from 1/2 lemon
salt and pepper to taste
Cook pasta according to package directions. Roast chickpeas at 425F for 20-30 mins, depending on how crispy you want them. Add all dressing ingredients to a jar and shake. Add pasta, veggies, spinach, chickpeas, olives, and cheese to a large bowl and pour dressing over top (you may not want to use all the dressing - if that's the case, store for later use). Mix well and enjoy!
