Easy 1 pot healthy vegetable soup!
INGREDIENTS:
- olive oil
- vegetable broth
- garlic
- yellow onion
- carrots
- celery
- potato (peeled)
- canned diced tomatoes
- green beans
- frozen corn
- frozen peas
- 2-3 bay leaves
- lemon
- salt, pepper, dried basil, ground thyme, dried parsley
DIRECTIONS-
- dice & prepare your vegetables
- sautΓ© onion, garlic, carrots, & celery with olive oil & salt/pepper
- add the can of tomatoes, green beans, potatoes & vegetable broth with bay leaves. let that come to a boil then put it to low heat for 20 mins. Once the potatoes are soft add in frozen corn/peas, seasonings, & juice of half of lemon. Let that cook for another 10 mins.

You can add whatever vegetables to the soup but this is my favorite combination. I really donβt measure how much of of each vegetable, I just eyeball it. I try to make it an even ratio.
