Ingredients

• 8 regular size Idaho potatoes

• 1 carton of chicken broth

• 1lb smoked pork Jawl bacon

• 4 cups of water

• 1 medium sweet onion

• 2 tbsp Bacon Jam

• 2 tbsp honey mustard

• 2-3 cloves of garlic

• 4 tbsp ham bullion

• 3 tbsp flour

• 1/3 cup of milk

• 3 tbsp butter

Directions

1. Dice your onion and garlic then add to the pot. Begin to sauté in your pot with the butter until translucent. Add honey mustard and bacon jam to the pot then cook on medium heat for roughly 3-4 minutes.

2. Dice jawl bacon up and add to the pan to cook while you are dicing your potatoes. You can use a pound of regular bacon instead of the jawl bacon but I find that the jawl is fattier and has a deeper flavor profile. It adds a Smokey yet sweet taste.

3. Add all your diced potatoes to the pot. Add the container of chicken broth as well. Take your ham bullion and dissolve in the 4 cups of warm water, then add to the pan.

4. Cook on medium high heat for about half an hour to forty-five minutes or until the potatoes are fork tender.

5. Once potatoes are cooked, add the milk and flour to a bowl and mix to create a roux. Add the liquid to the pot and stir to thicken it up.

6. Add salt and pepper to taste, then serve and enjoy!

This recipe is one my mother taught me and it is one of my favorite comfort foods, no matter the season. I could eat this every day and it is great to reheat for left overs.
