Sweet potato muffins with a cream cheese filling

Sweet Potato Muffin Recipe

• 3 sweet potatoes

• 1/2 cup melted butter

• 1/2 cup white sugar

• 1/2 cup brown sugar

• 2 eggs

• 1/2 cup milk

• 1 tsp Vanilla

• 1 1/2 cup flour

• 1 tsp baking powder

• 1 tsp baking soda

• 1/4 tsp cinnamon

• 1/4 tsp salt

Don’t forget to boil and blend sweet potatoes for smooth batter !

Crumble

• 1/4 cup brown sugar

• 1/3 cup flour

• 1 tsp ground cinnamon

• 2 tsp vanilla extract

• 4 tbsp melted butter

Stir till completely combined

Preheat Oven to 355°

Bake at 355° for 25-30 minutes

Cream Cheese Filling

1/2 cup cream cheese

2 tsp of heavy cream

1/2 powdered sugar

1 tsp vanilla

Before adding filling poke penny size holes into muffins after leaving oven let muffins cool for 15-20 minutes add your cheese filling and in joy!
