I recently just found out that I am allergic to gluten! Making the adjustment definitely has had its challenges, but it’s also inspired me to start trying more gluten free recipes. I’m always in the mood for chocolate and after looking through a couple recipes, I came up with this recipe for gluten free double chocolate chip banana muffins! The recipe is below with measurements. This recipe is highly customizable, so add whatever oil, sugars, butters, etc. that you like! Makes 12 muffins :)

Wet Ingredients:

-3 ripe bananas (mashed)

-1/4 cup oil

-1/2 cup of sugar or sugar alternative

-1/4 cup of nut butter

- 1 egg

-2 teaspoons of vanilla extract

Dry Ingredients:

-1 1/4 cup of gluten free flour

-1/2 cup of cocoa powder

-1 teaspoon of baking powder

-1 teaspoon of baking soda

-1/4 teaspoon of salt

-2/3 cup of gluten free chocolate chips

Instructions:

1. Preheat oven to 350 degrees.

2. Mix together wet ingredients and dry ingredients separately.

3. Slowly add in dry ingredients to wet batter and mix until smooth.

4. Fold in chocolate chips.

5. Line muffin tray with tins and fill with batter until almost full.

6. Top with extra chocolate chips.

7. Put in oven for 20-25 minutes. Use a toothpick to check for doneness.

8. Let cool for 45 minutes to an hour.
