Lazy Girl Meals: Street Corn

This is by no means the “best” street corn recipe, I’m not even sure if you can consider it street corn. It is quite delicious for a quick, lazy meal! Here is my twist on everyone’s favorite! (Also makes a great dinner side or try it on a tortilla with steak strips!)

Ingredients:

〰️Corn

〰️Mayonnaise

〰️Sour Cream

〰️Salt

〰️Pepper

〰️Your favorite seasonings, I use paprika, chili powder, Parmesan. I have an amazing “street corn” seasoning I bought from Aldi’s as well!

〰️Tajin

〰️Feta Cheese

Make it:

🌽 Heat your corn. For us lazy girls, it’s usually canned. If you’ve got fresh, go ahead and use it! I pop canned corn in the microwave about 3 minutes, fresh goes on the smoker for 1-2 hours.

🌽 Mix in mayonnaise & sour cream until well blended.

🌽 Add in seasonings! Feel free to mix it up to what you like!

🌽 Sprinkle in the feta cheese! Yes, most people use cotija, but that’s not something I ever have in the house. Feta is my favorite cheese and makes this meal so delicious!

🌽 Top with Tajin and enjoy!
