I loveeee to eat good so when I’m not traveling and eating out, I’m at home in Dallas whipping up in the kitchen. I have a really demanding day job so quick and easy recipes that use everyday ingredients are my go to’s. Here’s my take on Bistec a la Mexicana, and it’s boyfriend (and little sister) approved:

PREP:

- Cut your beef round steak (thin sliced) into strips

- Cut three roma tomatoes, half a large onion (I used yellow), two small bell peppers, and one jalapeño into strips (remove seeds if you don’t want it spicy)

- Boil water for salsa prep

- Wash your rice

STEP ONE: Salsa

- Once your water boils drop three whole roma tomatoes and one jalapeño into the boiling water. Leave them in there for a couple minutes, long enough to soften but not long enough for the tomatoes to burst, 2-4 minutes.

- Remove the veggies from the after and place into blender. Add some of the boiling water. I don’t measure things but it was about a cups worth.

- Add chicken boullion and a pinch of black pepper. I don’t add salt because the boullion is already salted but you can season to your taste.

- Blend and set aside.

STEP TWO: Rice

- Make your rice of choice. I like white rice with my bistec so that’s what I made. But how’s the time to get your rice cooking so it’s ready at the same time as your meat.

STEP THREE: Bistec

- Over medium heat add onions, jalapeños, and bell pepper to heated olive oil. Add about 4 garlic cubes after veggies are coated in the oil.

- Add sliced meat and tomatoes. Stir everything together.

- Season veggies and meat. I used black pepper, red pepper flakes, garlic powder, chicken boullion, a pinch of salt, an entire packet of sazón, and then I squeezed half a lemon over everything. Season til the ancestors tell you to stop.

- Stir in the seasonings so everything is well mixed. Let everything heat up for about a minute and then pour the salsa mixture into the pan.

- Cover and let simmer over medium heat for about 15-20 minutes. Stir periodically.

- Taste test, realize this is perfect, and get ready to grub!

Serve with rice, tortillas, and aguacate 🥑 Enjoy!
