In a sensitive time where my boyfriend is trying to gain weight and I’m trying to lose, I knew I had to find a way to keep eating our favorite 20 minute dinner! *where he is packing the calories and I can remain in my deficit*
So I present you my ✨300 calorie ramen✨
(Give or take depending on choice of meat)
*I used pork making it slightly more caloric*
🍜INGREDIENTS🍜
🤍skinny pasta: angel hair, 9 calories for the whole bag! (I have also used a brand called miracle noodles)
🤍AFC miso soup in a cup x2, 70 calories total, 35 each.
🤍3 tablespoons of low sodium soy sauce, 30 calories
🤍3 teaspoons of siracha (optional)
🤍soft boiled egg, 70 calories
🤍shiitake mushrooms, 20 calories
🤍corn 1/2 cup, 60 calories
🤍your choice of meat! I did pork ribs ( 1/2 oz) 50 calories
🤍extra crunchy seaweed if you like it!
Of course this meal can be over or under 300 calories (depending on what you add or take away).
👩🏻🍳How I cook my noodles and veggies:
I first drain the skinny noodles, and then add them to a pan with my soy sauce and a tiny bit of siracha (sesame oil is also bomb in this)
Then I add my veggies and let them sauté with the noodles. 📒Notes: the noodles are already cooked I just use a high heat to get them slightly firmer and to let the sauce seep in.
In the meantime, I boil an egg for 7 minutes to get it nice and jammy, then add it to an ice bath to cool, peel and slice in half.
Then I cook my meat (I usually throw it in the air fryer)
Once the veggies are cooked, I add 2 cups of hot water to a bowl and stir in the miso packets.
Then I add in my noodles, veggies, and meat of choice and voila! 🍜
