White Chocolate Strawberry Cheesecake Bites ✨

Ingredients:

- 1 cup crushed graham crackers

- 3 tablespoons unsalted butter, melted

- 1 package (8 oz) cream cheese, softened

- 1/4 cup granulated sugar

- 1/2 teaspoon vanilla extract

- 1/2 cup white chocolate chips, melted

- 1/2 cup fresh strawberries, finely chopped

- Extra strawberries and white chocolate chips, for garnish

Directions:

1. In a mixing bowl, combine crushed graham crackers and melted butter until the mixture resembles wet sand.

2. Press the graham cracker mixture into the bottom of a silicone mini muffin pan to form the bases.

3. In another bowl, beat the cream cheese, sugar, and vanilla extract until smooth.

4. Fold the melted white chocolate into the cream cheese mixture until well combined.

5. Stir in the finely chopped strawberries.

6. Spoon the cream cheese mixture over the graham cracker bases, filling each to the top.

7. Refrigerate for at least 2 hours, or until set.

8. Once set, gently remove the cheesecake bites from the silicone pan.

9. Garnish each bite with a small piece of strawberry and a drizzle of melted white chocolate before serving.
