π Ingredients π
For the Lavender Sugar:
1/2 cup granulated sugar
1 tsp dried lavender, ground
Zest of 1/2 lemon
For the Cookie Batter:
1 cup granulated sugar
1/2 cup unsalted butter, room temperature
1 whole egg, room temperature
1 egg yolk, room temperature
Zest of 1 lemon
1 tbsp fresh lemon juice
1 tbsp dried lavender, finely ground
2 tsp vanilla extract
1 3/4 cups all-purpose flour
1/4 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
For the Lemon Icing:
1 1/2 cups powdered sugar, sifted
2 tbsp heavy cream
Juice from half a lemon

1οΈβ£ Make the Lavender Sugar:
In a small bowl, combine the granulated sugar, ground lavender, and lemon zest. Set aside.
2οΈβ£ Make the Cookie Batter:
In a large bowl, cream the butter and sugar until smooth. Beat in the egg and egg yolk until light and fluffy. Add in the lemon zest, lemon juice, lavender, and vanilla extract, then mix well.
3οΈβ£ Add Dry Ingredients:
Fold in the flour, baking soda, baking powder, and salt until combined.
4οΈβ£ Shape & Bake:
Scoop 1 1/2 tbsp of cookie dough for each ball and roll them in the lavender sugar. Place on a baking sheet and bake at 350Β°F for 10-12 minutes. Let the cookies cool completely.
5οΈβ£ Make the Lemon Icing:
Whisk together powdered sugar, heavy cream, and lemon juice. Spread the icing over the cooled cookies and enjoy!
