My second time buat red velvet cake and this time i loveeee the result ! I made my own buttermilk and reduced the vinegar cause i dont really like the buttermilk bought at store and i contol the taste with lemon juice 😆 For the cream cheese fosting, i recommend to reduce the icing sugar ( i guna 2 cups which i dasa dah okay for me) and for the cream cheese make sure cream cheese korang tak terlalu lembik or else the frosting tak dapat hold the cake layers . Save this recipe for future baking reference korang nanti 😉
Yields : 15-20 cupcakes
Prepping time : 15-30 minutes
Baking time : 30 minutes (per tray)
Decoration time : 15 minutes
Temprature : 160-180c (my oven 190c soo ikut oven sendiri)
Anyways, here’s the recipe :
275 g all purpose flour
17g corn flour
10g cocoa powder
1/2 tsp baking soda
1 tsp baking powder
1/2 tsp salt
90g butter (pure butter for the best taste !!)
3/4 cup vegetable oil
350g castor sugar
3 eggs (A)
1 tsp vanilla paste
1.5 tsp white vinegar
4-5 tbsp red food colouring
180g homemade buttermilk.
Buttermilk :
1 cup full cream milk
1 1/2 tbsp lemon juice
(Keluarkan 1 tbsp full cream milk from the 1 cup measurement and gantikan with 1 1/2 tbsp of lemon juice)
Cream cheese frosting :
230g butter
2 cups icing sugar
340 g cold cream cheese
1.5 tsp vanilla paste
1 -2 tbsp lemon juice (adjust ikut selera masing masing )
