Here’s how to make this super easy fall dinner:

In a small saucepan combine melt 3 tablespoons butter then add 2 minced garlic cloves and simmer until fragrant, about 1 minute.

Whisk in 1/2 can of pumpkin puree (not pie filling). Then 2/3 cup of cream or half and half. Whisk in 1/2 cup grated Parmesan. Add salt and pepper, taste to adjust. Keep it simmering while boiling noodles. I used 10 oz dry Mafaldine for this recipe.

Reserve 1/3 cup pasta water before straining.

In a large bowl combine cooked pasta with pasta water, pumpkin Alfredo sauce, 1/2 cup grated Parmesan, red pepper flakes. Toss together (the sauce will thicken as it sits). Drizzle with hot honey!
