Hotpot is one of my favorite meals; it is a fun dinner idea where you and your friends can gather around, socialize, and eat freshly dip-cooked ingredients like meats and veggies. I make a more macro-friendly variation of hotpot by choosing a tomato-based broth because it is less oily. I try to incorporate more veggies, and I eat fewer heavy carbs.
Ingredients:
Package broth
Vegetables of choice
Meats of choice
Seafood of choice
Sauce ingredients (example: soy sauce, sesame sauce, oyster sauce)
Instructions:
1. Prepare the ingredients. Wash and cut veggies, slice up meats and seafood. Prepare soup base accordingly to packaged instructions. You can also use chicken broth for a really light hot pot base.
2. Make your sauces. Typical hotpot sauces include a mixture of sauce ingredients like soy sauce, sesame sauce, Chinese BBQ sauce, lime juice etc. You can experiment and customize the different sauce ingredients to your liking.
3. Pour prepared broth into a hotpot.
4. Set the hotpot onto a portable burner.
5. Once the broth boils, immerse the ingredients into the broth until the ingredients fully cooked. Remember that certain ingredients have different cook times.
